What am I going to make for dinner tonight? Don’t you hate that feeling?
We have ALL been there. It is the “dreaded dinner hour”. You look into your cupboards and refrigerators, only to draw a blank as to what to make with all of your groceries. Why, oh why do we hate this part of our day with a passion? Do we lack ideas…effort… time? Yes, yes, and YES. It is all 3. We are BUSY mamas and our plates are FULL (pun intended).
Well, worry no more. There is a solution to every problem.
Here are 7 family friendly dinner ideas that are sure to please everyone’s palate. The black bean burgers are a favorite in my house, and can be whipped up in minutes!!!
Whole roasted chicken seasoned with thyme, garlic and olive oil, brown rice and steamed broccoli. Use any leftover chicken in soup, chicken sandwiches, quesadillas or freeze for another day.
Homemade beef or black bean burgers (see recipe on my website) on whole grain buns. Serve with a side salad and cous cous with raisins.
Salmon filets seasoned with lemon and dill, roasted potatoes and glazed/steamed carrots
Vegetable frittata (sauté your choice of veg until tender crisp, add eggs and cheese for frittata), with fruit salad. Multi grain toast (optional)
Sautéed shrimp over fettuccini. Serve with peas and/ or a side salad.
Stir fried vegetables over quinoa or rice noodles. Sprinkle nuts and/or seeds over top for added protein.
Quick and easy homemade pizza. Spread pizza sauce over thin hamburger buns (i.e PC Thin Multi-Grain Round Hamburger Buns), load it with your favorite pizza toppings and broil (just until cheese melts). Serve with raw veggies sticks and hummus.
