Chocolate Peanut Butter Bites Recipe

Ingredients For Chocolate Peanut Butter Bites Recipe

I Cup of PBFIT (or you can use regular peanut butter)

6 TBSP of Cocunut flour (we love BetterBody Coconut Flour)

1/3 of fruit sweetener (we recommend BetterBody Foods Monk Fruit Sweetener

1/2 cup and 1TBSP of canned coconut milk

2oz unsweetened dark chocolate

1TBSP of monk fruit to mix separately.

Directions

1. In a medium sized mixing bowl, Blend together your peanut butter, coconut flour and monk fruit. Next, stir in the coconut milk. You want the consistency to resemble a cookie batter mixture.

After you have achieved the consistency of the mixture, scoop out by the tablespoon. Then you roll each tablespoon into balls. Place the balls on a cookie sheet that you have line with parchment paper. Place in refrigerator for 10 minutes.

2. Place chocolate and monk fruit (1tbsp) in a small ramekin and microwave until melted (approx. 2 minutes).

3. Dip your peanut butter balls in melted chocolate and place on cookie sheet. Refrigerate for at least 30 minutes. (an hour is ideal). Enjoy immediately!
