Strawberry lemonade cupcakes ..oh my!

I absolutely love everything about summer but I definitely do miss baking my favorite thing, cupcakes! We don’t have air conditioning in our house so turning on the oven seems unnecessary.
I was recently invited to a potluck bbq and decided to turn on my kitchen-aid and get sweaty around my oven. I was craving something tangy and sweet as well as refreshing. These strawberry cupcakes turned out so delicious and satisfying and definitely taste like summer! My husband and son said they were a favorite and they were also a huge hit at the bbq!
I love using fresh fruit in season and try to bake guilt free when I can..strawberries and lemons make them healthy right?!

I have shared my recipe below and I hope you enjoy them as much as we did!

Makes 12. Bake at 350 for 18 to 20 minutes.

Cake:
1 1/4 cups flour
1 Teaspoon baking powder
1/4 teaspoon of salt
1 cup sugar
1/2 cup of butter
1 egg
1/2 cup of yogurt (keeps cake moist)
3 tablespoons of fresh lemon juice or more for tartness
2 teaspoons lemon zest
You can also use lemon extract but I like real thing.

Frosting:
1/2 cup butter
3 cups icing sugar
1 cup of chopped strawberries (press with a paper towel to get rid of water)
1 teaspoon of lemon zest
1 tablespoon of fresh lemon juice.

To make the cupcakes combine the dry ingredients into the wet ingredients, I add the lemon juice once the cake batter is all mixed together. I also find cupcakes always taste lighter when the batter isn’t over mixed.
While the cupcakes are baking you can prepare your amazing frosting. I like to chop my strawberries fine then add them to the mixer because I find they are easier to pipe this way. If you don’t plan on piping your frosting you can stir in the strawberries instead. Both ways will taste delicious!
